Signature Dishes Make Big Splash at Lotus Cafe and Juice Bar

Earlier this year, Carl and Johanna Wright, owners of Lotus Cafe and Juice Bar in Encinitas, decided to spend more time focusing on the most important meal of the day—breakfast. “In this busy world, it is so easy to forego eating breakfast,” shares Johanna. “Yet, I feel so grounded and strong on the mornings when I do take time to nourish this physical vehicle... I am more likely to get in good exercise because there is fuel in my body. And, emotionally I tend to feel happier and more uplifted.”

With a tantalizing array of breakfast options, the pair shares that three menu items in particular have become their signature breakfast dishes—the bodacious Balboa Burrito, rocking Huevos Rancheros and the coveted Coconut French Toast. Each of these brilliant dishes has made their way into the hearts of many  Lotus Café customers.

Nothing says I’m ready to take on the day better than Lotus Café’s famed Balboa Burrito. “It’s my new favorite for brekky, which gives me an energy boost at the beginning of my day, and I find that my mental focus is stronger. It keeps my energy up and keeps me from reaching for something less healthy later in the day out of pure hunger,” says Johanna.

Inspired by the savory goodness of the region, every bite of the Balboa Burrito is bursting with flavor. This unforgettable masterpiece features delicious free-range scrambled eggs, smooth melted cheese, golden fried potatoes, fresh local avocado and zippy salsa fresca, all bundled up in an organic whole wheat chapati. The tantalizing blend of flavors is sure to please hungry tastebuds.

The scrumptious Huevos Rancheros is another customer favorite. Made with two free range eggs on organic corn tortillas, this dish is smothered in a delectable homemade ranchero sauce, refreshing cilantro and mouthwatering Monterey jack cheese. Served with organic brown rice, beans, guacamole, salsa and sour cream, every bite of this lip-smacking meal is a heavenly treat. “Huevos Rancheros is my most often ‘go-to’, paired with a double-shot of wheatgrass and a café mocha,” explains Carl. “For every shot of espresso, we freshly grind our organic Joshua Tree Coffee Company coffee beans. We sampled every coffee in the area, and found that Joshua Tree Coffee is the best, and our customers agree.”

Those seeking a brilliant pairing of sweet and savory need look no further than the rich and flavorful Coconut French Toast. This delectable dish features two thick slices of 8-grain, sourdough or gluten-free bread, hand-dipped in egg batter, spiced with cinnamon, coconut and vanilla, and topped with seasonal fruit. Served with a side of real maple syrup, this delicious dish makes a magnificent meal.
