Summer Recipes from Hungrier for Health

12 oz. vanilla flavored coconut milk yogurt
1 cup strawberries, leaves removed
¼ cup unsweetened apple juice
½ tsp almond extract
2 fresh mint leaves or 1 t dried mint flakes
Puree all ingredients together. Pour into serving bowls and chill. Garnish with mint and serve.
Yield: 2 servings
Nectarine Sunburst Salad
2 cups baby arugula
2 ripe nectarines
8 soft pitted dates, coarsely chopped
1 Tbsp walnut oil
1 tsp apple cider vinegar
½ tsp pure maple syrup
Divide arugula and place in middle of two large salad plates. Cut nectarines to the pit to form about 10 thin slices each. Arrange nectarine slices, sunburst style, around the outside of each plate. Place dates in center atop arugula. In a small bowl, whisk together vinegar, oil and syrup. Drizzle dressing evenly around the arugula.
