Enjoy a Nourishing Breakfast at Lotus Cafe and Juice Bar

If you ask Carl and Johanna Wright, owners of Lotus Cafe and Juice Bar in Encinitas, what brings them joy, they’ll probably share stories about their numerous trips to India and more recent excursions to the California desert. They also enjoy peaceful yoga and meditation sessions, experimenting with new culinary creations, and delighting in a hearty, nourishing breakfast.

         All it takes is one visit to Lotus Cafe and you’ll immediately notice how they’ve infused these passions into their restaurant’s theme. With a hunger to continue evolving the café’s offerings, the pair has gone to great lengths to share their love of the day’s first meal by providing an outstanding breakfast dining experience.

         For starters, this popular healthy eating establishment, voted “2017’s Best of Vegan in San Diego” from, now opens at 7 a.m. “This way you have plenty of time to enjoy an energizing meal to be awake and ready to face the day,” says Johanna, who shares that their scrumptious breakfast menu includes items such as the popular Artichoke Scramble, Vegan Tofu Scramble, Coconut French Toast and Vegan Buckwheat Pancakes. “The Coconut French Toast made with eight grain bread or sourdough with a side of fruit is really a treat. It’s one of our most popular breakfast items.”

         The pair shares that several of the dishes, including the Balboa Burrito and Huevos Rancheros, are so hearty they make an ideal brekkie following a morning surf session. The Balboa Burrito, a local favorite, consists of free-range scrambled eggs, cheddar, breakfast potatoes, avocado and house-made salsa fresca all tucked into an organic whole wheat chapati. “You can opt to add in one of our proteins including turkey sausage or bacon, veggie sausage or soy bacon. You really can’t go wrong with anything on the menu; I think you will love this breakfast,” says Carl, who notes that many of the menu items are named after some of his favorite places in Encinitas.

         Lotus Cafe also offers generously sized Acai and Pitaya Bowls blended with your option of organic apple juice, almond milk or soy milk with blueberries and banana. “We also top each bowl with fresh fruit, coconut and organic granola and honey,” says Johanna.

         Another way this energetic couple embraces the local culture is by supporting local companies. On a recent trip to the California desert, Carl and Johanna stopped for a cup of Joe at the Joshua Tree Coffee Company. “We struck up a conversation with the owner, Royce, who told us his favorite restaurant in Encinitas was Lotus Cafe. We immediately hit it off. We also fell in love with his coffees and totally support his coffee brewing philosophy,” explains Johanna.

         “I’ve never had coffee that has as much flavor as this coffee,” agrees Carl, who shares that he and Johanna enjoyed it so much, they now offer Joshua Tree Coffee Company’s First Roast organic coffee to their customers. “It’s our ‘house’ brand. We’re proud to be the only restaurant in Encinitas to offer this incredible coffee.”

         For those who’d prefer an alternative breakfast beverage, Lotus Cafe’s juice bar offers fresh fruit and vegetable juices, wheat grass and ginger shots, as well as an extensive smoothie menu. In addition, drink offerings include Indian Masala Chai tea with ginger and cardamom. The recipe, featuring authentic spices, is made twice daily from scratch. This delectable tea, a quintessential embodiment of the café’s cultural blend, was crafted by Carl, who worked on the recipe for six months to perfect it.

         Not an early bird but still a breakfast aficionado? No problem, as the café features an all-day breakfast menu. “For dinner, my personal favorite is the Artichoke Scramble with a salad instead of potatoes and toast,” says Johanna.

         Carl and Johanna pride themselves on providing something for everybody at every meal. While the menu significantly emphasizes plant-based dishes, Cafe Lotus also offers fish and poultry options, along with a wide variety of gluten-free selections.

         Diners can either eat inside the comfy restaurant or outside on the largest outdoor dining area in Encinitas. The patio, one of the largest in North County, features approximately 100 seats, including several large tables for parties of up to 10 people. “It’s a wonderful, pet-friendly patio that’s open all day. It’s a great place to happily enjoy a healthy meal with your family or friends,” adds Carl.
